Japanese Curry Sauce Tricks

  1. I was reading on the internet that some Japanese cooks brine peeled apples and grate them into sauce base. Are there any other tricks-of-the-trade regarding sauces?

    Apple is the main ingredient that accounts for the sweetness of Japanese curry sauce. Carrots are also used t times.
